Apple Spiced Banana Pancakes
Ingredients
- 1 banana mashed
- 2 eggs beaten
- 1 tsp pumpkin pie spice
- 1/4 tsp Cinnamon
- 1/4 tsp Coconut sugar
- 1 apple
- Coconut oil
Instructions

For the topping: Peel apple and slice 3/4 of it thinly lengthwise. Reserve the remaining 1/4 apple and chop finely, set aside. Over medium heat melt 1 tsp coconut oil and sauté apple slices. Sprinkle with cinnamon and coconut sugar. Set aside.

For the pancakes: Mix mashed banana and beaten eggs together and add pumpkin pie spice and chopped apple. Blend well but leave chunky. If its too thin it will be hard to flip. Preheat a griddle to 275-300 degrees and grease well with coconut oil. Use a 1/8 c measuring cup and scoop batter onto griddle. Let cook until edges brown and bubbles form in the middle. Flip very carefully (this takes practice, be patient) continue cooking on opposite side until center is firm. Top with cinnamon apples and a drizzle of pure maple. Enjoy!
