Love Beet Hummus by Clean Eats & Treats
I decided to add some roasted beets for a fun Valentines Day spin and the result was not only beautiful but delicious! You may want to double or triple the batch… it goes fast! The smoky flavor from the roasted beets combined with the citrus punch from the lemon takes this recipe to the next level. I topped ours with toasted pine nuts and olive oil. Enjoy!

- 1/2 tsp cumin
- 1 tsp sea salt
- 2-3 tbsp olive oil plus 1 tsp

Quarter love beets and toss in 1 tsp olive oil. Lay beets out evenly on a parchment lined cookie sheet.
