If I had to pick a favorite candy bar, it would definately be an Almond Joy. I am a loyal coconut, chocolate and almond lover to the end, to me there is no better candy bar combination! Unless were talking cups, then Reese’s take first place. Because chocolate + peanut butter obviously.
Sugar and I broke up years ago so I am always looking for a way to recreate my favorite treats! Powerballs have become just that! If I crave it, you better believe I’ll find a way to make it healthy!
Almond Joy Powerballs by Clean Eats & Treats
I recently started using XR Systems protein and I am LOVING it! The flavors are phenom and it adds the tastiest addition to all my powerball recipes! Almond Joy Powerballs by Clean Eats & Treats
These LITTLE NUGGETS are the real deal! So close to an Almond Joy you’ll fall in love at first bite! I love the flavor of the almond butter but feel free to use any other nut butter as needed. Whatever you do DO NOT skip toasting the coconut, it adds a whole new level of YUM! Enjoy!
Almond Joy Powerballs
Ingredients
- 1 1/2 cups old fashion oats slightly broken down in the blender
- 1 cup almond butter I use Justins
- 1/2 cup toasted don't skip that unsweetened coconut
- 1/2 cup raw honey
- 1/4 cup enjoy life chocolate chips
- 1 scoop chocolate protein powder try XR systems
- 2 tbsp cocoa powder
- 2 tbsp chopped almonds
- 1-2 tbsp coconut milk start with one, depending on the consistency you may not need to add the other
- 1 tbsp coconut oil melted
- 1 tsp almond extract
- 1/2 tsp vanilla extract
- 1/4 tsp sea salt
Instructions

Combine all dry ingredients in kitchen-aid mixer bowl.

Mix on low until ingredients are well blended.

Add wet ingredients to blended dry ingredients.

Mix on medium speed until a "dough" forms.

Scrape sides of bowl with a spatula and mix again if needed.

Remove bowl from Kitchen-aid stand.

Using a 2-inch cookie scoop form dough into balls.

Set balls on a parchment lined cookie sheet or storage container and refrigerate for at least one hour or until ready to eat.

Keep refrigerated up to one week, if they last that long! Enjoy!

Yes! You could skip it completely and add more nuts or seeds in its place!

You could leave it out and replace with more hemp and chia? It is hard to detect the coconut flavor but adds just the right texture. You may be surprised that you like it!
