With Valentines Day just around the corner I’ve been thinking of fun ways I can surprise my little people! I’m usually a Target dollar spot kind of Valentines day mom, but this year I wanted to whip up a batch of special healthy treats for my little loves! It’s no surprise we all love peanut butter cups around here, I mean who doesn’t!? I usually splurge with a few Reese’s peanut butter hearts BUT this year I wanted to create something I felt a little better about giving to them!

I knew there had to be a way to clean up our favorite treat! I’ve used Enjoy Life dairy free chocolate chips in so many recipes and LOVE the flavor, I thought why not melt them down and stuff them full of protein packed peanut butter! Chocolate and peanut butter were just meant to go together.
I love the addition of protein powder in this recipe, it adds flavor and protein making these an easy choice when the cravings set in! You can use any vanilla protein powder for this recipe, both plant based or whey work great. I’ve tried several and it stays consistent in flavor and texture each time.
They taste EXACLY like a Reese’s peanut butter cup.
I like to keep ours in the freezer, that way they not only last longer but take a bit longer to eat! Otherwise we could all eat a dozen at once! Plus this way you can whip up several batches at once to have on hand for emergency chocolate therapy as needed! Because who doesn’t love chocolate therapy?
Okay fine I still hit up the dollar spot at Target. I just can’t resist it. It speaks to me. But these will be a tasty addition to all the crafty little things I grabbed and didn’t need! I think my kids will be thrilled with both.
Do you do small gifts for each holiday? I like to surprise my kids with a themed breakfast and a little gift in the morning to show them I love them. Nothing big and the cheesier the better! In this case the chocolatier the better.

Clean Eats Peanut Butter Cups
Ingredients
- 1/2 cup all natural creamy peanut butter I use Adams all natural no-stir
- 2 scoops vanilla protein powder
- 2 cups enjoy life mini chocolate chips
- 2 tbsp coconut oil
Instructions

Fill mini muffin tin with muffin liners and spray with coconut oil spray and set aside.

In a medium size bowl mix peanut butter and protein powder together. If its too sticky add more protein powder. If its dry add a bit more peanut butter. It should be easy to roll into a ball without sticking to your fingers.

Separate the peanut butter and protein mixture into 24 teaspoon sized balls and set aside.

In a microwave safe bowl, melt enjoy life chocolate chips and coconut oil, stirring every 45 seconds until chocolate is smooth.

Scoop one teaspoon of the chocolate mixture into the bottom of each muffin liner. Freeze for 5 minutes. Remove.

Place one protein peanut butter ball on top of each hardened chocolate, carefully flattening the ball..

Lastly, add two additional teaspoons of the melted chocolate on top of the peanut butter ball to each liner to complete your peanut butter cup.

Place muffin tin back in the freezer for 10-15 minutes until chocolate is hardened.
