Dinner tonight was a simple batch of Creamy Dairy Free Kale and Bacon Soup enjoyed in our jammies! No real recipe. We just used up Christmas dinner leftovers and the result was amazing!

Creamy Dairy Free Kale & Bacon Soup
Ingredients
- 1 shallot diced
- 2 garlic cloves minced
- 2 handfuls shredded carrots
- 2 slices of bacon
- 1 large bunch of kale stems removed, roughly chopped
- 1 cup roasted Cauliflower and Parsnips mashed
- 1/2 cup diced ham
- Salt & Pepper to taste
- Organic Chicken Stock
Instructions

In a large stock pot sauté bacon, crumble and set aside.

Use remaining bacon grease to sauté shallot, garlic and carrots until soft.

Add kale.

Pour in enough chicken stock to cover the veggies and simmer for about 10 min.

Add cauliflower parsnip mash to give it a creamy texture.

Add ham.

Season with salt and pepper and voila! Dinner!
