Farmer’s Market Omelette with spinach, tomato, red onion and feta with a side of plums by Clean Eats & Treats
There is nothing tastier than an omelette stuffed with fresh Farmers Market finds! Am I right? I look forward to our Friday morning Farmers Market runs. My little and I mozy our way though the crowds and just take it all in. Something about the atmosphere relaxes me and takes me to a simper life for just a moment. I’m a city girl at heart. Born and raised in Boston until I was 12. We moved to Utah and I was completely out of my element. I’ve learned to love it here and as an adult I find great joy in the idea of moving my little family to a few acres of land in the middle of nowhere. Forget about the material world for a while and just enjoy each other. Daydreaming…
Anyways back to our Friday adventure… She is a big fan of the bread truck, Her eyes light up every time she spots it. “Mommy can we get a “cressentaunt” with yummy cheese and ham inside”? I love her vocabulary. I love that she looks forward to our Friday adventures. Always a croissant with ham and cheese in her hand and fresh peach in the other. Definitely my child! We always leave with sticky hands, breakfast down our shirt and big smiles. She loves good food as much as her mamma! Today we left with fresh salsa and tortilla chips, honey, homemade baked goods and breads, peaches, plums, tomatoes, squash, apples, potatoes, and beets. Heart eyes. Fresh produce makes me giddy. Is that odd? Ha. Breakfast was perfection. Our omelette had spinach, tomato, red onion and feta with a side of plums. Delicious! Until next week… I’ll be daydreaming of a simpler life.
