I’m sneaking garlic into as many recipes as I can. It’s my home remedy to fight the bugs going around right now. Garlic is a powerful antioxidant with antimicrobial, antiviral and antibiotic properties. It also provides a decongestant and expectorant effect for the common cold and flu. As a child my mother would crush fresh garlic, mix it with honey and feed it to us on toast! It really works. When you crush or mince garlic it causes a chemical reaction that releases allicin. Allicin is a powerful antibacterial only present shortly after garlic is crushed and before it is heated! You can even nibble on a raw clove if you’d like, although that would probably be the least social approach. Ha! I like to heat chicken stock and add a spoonful for my littles to sip on. If they’re sick enough they don’t complain! Sneak it into as many foods as you can this season! I sure am!

I love the combination of both beef and turkey. It keeps them light but still moist and delicious! Subbing the almond or hazelnut meal for breadcrumbs keeps them gluten and grain free without drying them out! Browning them on all sides seals in the flavorful juices, don’t skip it!
