We are obsessed with all things lemon in our family, so when Young Living asked me to create a summer recipe using their vitality line of essential oils… I knew exactly what vitality oil I would be using!! Lemon of course!! I knew immediately I wanted to create Lushious Lemon Powerballs!!
Young Living’s line of vitality essential oils were created to be used in the kitchen. Amazing right? I’ve used cilantro in our salsa, basil in our marinara, ginger in our stir-fry and now lemon in our powerballs!!
Lemon Vitality Essential Oil

Use Young Living’s Lemon Vitality™ essential oil to add flavor to savory dishes like pasta and chicken or sweet foods like cookies, cakes and powerballs.
Lemon vitality comes in your starter kit and is one of my most used oils. I love to add a few drops to a cup of hot water in the am, in my dressings and marinades and to perk up my plain greek yogurt when I don’t have fresh lemons on hand.
Lushious Lemon Powerball Ingredients
- OLD FASHIONED OATS
- COCONUT BUTTER
- RAW HONEY
- PROTEIN POWDER
- SHREDDED COCONUT
- VANILLA EXTRACT
- LEMON ZEST
- LEMON VITALITY OIL
- SEA SALT
HOW TO MAKE LUSHIOUS LEMON POWERBALLS
Are you ready to make Luscious Lemon Powerballs? You most likely already have all the ingredients on hand. Here’s a few tips to make the perfect powerballs I’ve learned over the years.
Step 1. Grind your oats
I like to use my blendtec bender for this. You want an almost flour consistency. If your oats are too course your ingredients won’t stick together making for a very crumbly “dough”. Its better to over blend than it is to under blend.
Step 2.
Mix all dry ingredients together in a bowl. I like to use a kitchen aid mixer with a paddle attachment but you can easily make this recipe by hand with little extra elbow grease.
Step 3.
Melt coconut butter in the microwave for 30 seconds. Stir. You want a natural peanut butter consistency. Melted but not runny I that makes sense? Add the remaining wet ingredients to coconut butter and stir.
Step 4.
Add your wet ingredients to your dry ingredients and mix on low speed of your kitchen aid mixer with the the paddle attachment until a “dough forms.
Step 5:
Scoop the “dough” with a medium cookie scoop onto a parchment lined cookie sheet. Freeze for a minimum of 20 minutes to set the coconut butter. Powerballs will be hard. Enjoy!!

Lushious Lemon Powerballs
Lushious Lemon Powerballs are a healthy snack that tastes like a treat!! Freeze them for an easy grab and go snack to fuel your work out or your work day
Ingredients
- 2 cups Old Fashioned Oats ground fine
- 1 cup Coconut Butter
- 2/3 cup Honey
- 1/3 cup Unsweetened Shredded Cocout
- 1 scoop Vanilla Spice Pure Complete Protien
- 2 tbsp Lemon Zest
- 1 tsp Vanilla Extract
- 10-15 drops Lemon Viatlaity Essential oil
- dash Sea Salt
Instructions

Pulse oats in a blender until fine.

Melt coconut butter in the microwave for 30 seconds. Stir.

Add all dry ingredients to the bowl of a kitchen aid mixer. Mix well.

Add vanilla, lemon zest, lemon oil, honey and melted coconut butter to dry ingredients.

Mix until a dough forms. Scoop into balls with a medium sized cookie scoop or a tbsp sized measuring spoon onto a metal tray.

Pop in the fridge or freezer for 30 minutes to set.

Hi becky!! You could try cashew butter? It has a more mild taste. I would have to play around with it though!! Not for sure on the swaps for quantity!!
