Pizza Supreme Zoodle Casserole

If you love pizza but not all the gluten and carbs, this recipe is your new best friend! My entire family raved about this dish which is tricky to accomplish these days! Mom win!

Pizza Supreme Zoodle Casserole

Ingredients

  • 1 lb ground sausage
  • 1/2 c diced pepperoni
  • 3 zucchini spiralized
  • 1/2 green pepper diced
  • 1/2 onion diced
  • 1 clove garlic minced
  • 1 egg beaten
  • 1/2 c Marinara I like White Linen from Costco
  • 2/3 c shredded parmesan cheese
  • 1/4 c shredded mozzarella
  • 1 tsp italian seasoning
  • salt and pepper to taste

Instructions

  1. Brown sausage over medium heat with onion, garlic, and green pepper. Rinse under warm water to remove oil. Return to pan and add Italian seasoning. Remove from heat and set aside.
  2. In a separate bowl combine spiralized (if you don't have a spiralizer you can also use a Julienne peeler) zucchini, egg, parmesean cheese, marinara and salt and pepper. Add sausage mixture to zucchini mixture and blend well. Spray a 9x13 dish with oil and evenly spread mixture.
  3. Bake at 350 for 30 min. Top with mozzarella and bake until cheese is bubbly. Remove from oven and let set for 10 min. You may need to remove some liquid before serving. Enjoy!
