My life goal as a mother is to raise kind humans. Kind humans that can make me avocado toast upon request. Well friends, today is that day and my heart couldn’t be more full. There is no greater feeling in the world than watching your children succeed, am I right mamas?
I joke, but really.
I have made sure all three of my children are sufficient and confident in the kitchen. This is so important to me and not just because I can sleep in on Saturday mornings (I’m not complaining) and get breakfast in bed on my birthday (this is nice too).
It’s really about so much more. It’s about building confidence, relationships and mounds of good food.
I’ve taught them the basics, allowed them to get creative with ingredients and eaten one too many failed recipes with a smile on my face. Why? Food is my language of love and sharing that with my babies has created an incredible bond with each one of them individually. One I’ll cherish always and their future spouses will thank me for.
They say the kitchen is the heart of a home and I couldn’t agree more. It’s where our families hearts (and bellies) are the fullest.
INVITE YOUR KIDS INTO THE KITCHEN
Let’s be honest, they’re going to follow you in there anyways, so you might as well put them to work! My eight year old has been by my side (and legit on my side) in the kitchen since birth. It’s quickly become “our thing” and most days you can find her chopping veggies or whipping up a batch of powerballs right alongside me. I love that she loves to cook and create in the kitchen as much as her mama. I love even more the quality time and memories we are making together.
Kids love to help! When creating meals for themselves all pickiness goes out the window. I’ve seen it first hand with my youngest. Try it next time you’re introducing a new vegetable, you’ll be shocked at how fast those veggies magically disappear when prepared by your little! She hasn’t always loved avocados, but she does now! Just look at that smile, it’s a win win for both!
One of our favorite things to create in the kitchen is avocado toast. Not only is it delicious, but it’s a meal I can feel good about feeding my kids. I’m always in search of combos that cover all the nutritional bases and this one wins. Packed full of whole grains, healthy fats and protein it’s the perfect balance of healthy and indulgent. I’ve never met an avocado toast I didn’t like, have you?

I was so excited when Good Foods sent me their new avocado mash cups to try! Simple and convenient fresh avocado without the anxiety of missing the ripeness window. Sold. They will definately be making a weekly appearance in our clean eats snack drawer. Just look at those clean ingredients too. Can pre-made mashed avocado make you feel like you just won the lottery?

This recipe isn’t much of a “recipe” at all. The combo was inspired by our favorite healthy spot in Salt Lake City. Any guesses? It’s easy enough for my eight year old to whip up and tastes like a splurge. I love the addition of cottage cheese for added protein and creaminess. It takes this toast to the next level.
Sprinkle with pumpkin seeds, kosher salt, pepper and red pepper flakes for a little kick of heat. Drizzle with avocado oil and enjoy! Simple and delicious.

Protein Packed Avocado Toast
Ingredients
- 2 slices Daves killer good seed bread thin-sliced
- 2 tubs Good Foods avocado mash or 1/2 avocado, sliced
- 1/2 cup organic 2% cottage cheese
- 2 tbsp raw pumpkin seeds
- 1 tsp everything but the bagel seasoning
- pinch of red pepper flakes
- dash garlic powder
- kosher salt and pepper to taste
- 2 tsp avocado oil
Instructions

Toast bread to your liking. The darker the better for me.

Top each slice with one tub avocado mash, 1/4 cup cottage cheese, 1 tbsp pumpkin seeds, 1/2 tsp EBTBS, pinch of red pepper flakes, dash of garlic powder, salt and pepper.

Drizzle with 1 tsp avocado oil. Enjoy!
