I like to live by the saying… TASTE A RAINBOW (and no I don’t mean skittles) LOL. Give me all the veggies!! Our bodies benefit from variety, eating a diversity of colorful foods can be an easy way to get a complete range of the vitamins and minerals your body needs to thrive! I often refer this mindset when referring to little people, but it goes for adults too!
They say we eat with our eyes and what better flavor than rainbow! Is rainbow a flavor? It’s a known fact that when our taste buds come in contact with food, they send signals to our brain to interpret flavor. Because we look at our food before eating, our eyes send signals to our brain long before our taste buds even get the chance!

Rainbow Veggie Sandwich Ingredients
- Canyon gluten free heritage style whole grain bread
- hummus
- roasted red peppers
- spiralized pickled carrots
- thinly sliced yellow bell peppers
- sliced cucumbers
- micro arugula
- sliced avocado
- picked purple onions
This would make such a fun and colorful girlfriends lunch spread. I love a good old DIY sandwich bar and an opportunity to enjoy good company! Next time you’re in charge of a girls lunch, put this rainbow veggie sandwich on the menu!
How to build a Rainbow Veggie Sandwich
- Start with two slices of Canyon Bakehouse Heritage Style Whole Grain bread.
- Spread each slice with 1-2 tablespoons of hummus.
- Start stacking.
- To layer in rainbow order start with roasted red peppers, then add in this order… pickled carrots, sliced yellow bell peppers, micro arugula, cucumbers, sliced avocado and pickled purple onions.
- Slice in half and devour!

When I began my gluten free lifestyle I thought I’d never eat bread again. I tried dozens of gluten free breads and none of them were much to write home about. Insert Canyon Bakehouse. OMG I have never been happier as a gluten free carboholic!

Pickled Carrots and Red Onions
The most delicious garnish to jazz up any meal!
Ingredients
- 1 medium purple onion sliced thin
- 2 medium carrots julienned or spiralized
- 2 cups red wine vinegar
- 1 cup water
- 4 tbsp sugar
- 2 tsp salt
Instructions

In a small saucepan heat the vinegar, water, sugar and salt until boiling. Turn the heat off and add carrots and onions. Cover with a lid and allow to cool to room temperature, about 30 minutes.

Place all ingredients in a mason jar or glass dish, cover and refrigerate for at least one hour to overnight. The longer they set the more flavor.

To serve, drain vegetables and set in a small dish as a garnish.
