I’m a huge sushi lover. If we’re going out for a treat meal, sushi is always at the top of our list! Spicy tuna being my FAVORITE roll along with anything tempura fried. Like you could dip cardboard in tempura and we would eat it. It’s THAT good. Kidding but really we love a good veggie tempura dish!
I wanted to create something with the same idea that I could incorporate into my weekly rotation. Every Monday I take inventory of what I have on hand in my fridge and pantry. Then I sit down and make a meal plan + grocery list. This saves money and makes it so much easier to meal plan on a budget.
Sriracha Tuna Wraps by Clean eats & Treats
There is always tuna on hand. We don’t eat a lot of it. But some days I just crave it! I wanted to try something different, something new. Everyone is pretty burned out with tuna and pickles around here!
I had a bunch of sliced veggies on hand from Sunday meal prep and some tortillas that needed to be eaten up. As I was going through the fridge I noticed two large open bottles of the same sriracha sauce! I hate when that happens. Something gets buried in the fridge so you or whomever assumes you are fresh out and pulls a new bottle from the pantry. Argh. With that said, lots or sriracha recipes coming your way!
I started brainstorming and within seconds sriracha mayo popped into my head! Just add tuna and its a spicy less gourmet version of our favorite sushi roll! Seriously delishhh! We all went crazy over it! Its sweet + crunchy with a little kick of spicy! It will now be on our weekly meal plan for lunch! I have a feeling it’lll be on yours too! Enjoy!
