Sweet Potato Tot Breakfast Casserole by Clean Eats & Treats
You know those meals where you have nothing prepared or thought out, so you just start throwing random ingredients into a pan and pray it tastes good when its all said and done? This is one of them. I woke up feeling a little under the weather and had no desire to get dressed and drag kids to the grocery store to shop. I opened the freezer and stumbled upon some sweet potato tater tots (say that five times fast) my little had thrown into the cart a few days earlier. I grabbed what I had in the produce drawer and decided to build it up from there! I layered sautéed kale, mushrooms, and sausage then topped it all with shredded parmesan cheese, eggs and tomatoes. The end result was surprisingly SO good! My husband came home early from work and ate 3/4 of the pan before dinner all by himself! My kids actually begged for seconds but there weren’t any. Rarely does this happen, like ever. I may just make it again for breakfast this week because mamma wanted seconds too!
Not only do I love a quick healthy meal, but I am all about kitchen hacks to make cooking a little easier, especially during the witching hour. Dinner is stressful enough. WhiskWare Salad Shaker
For someone who rarely buys store bought salad dressing I was so excited to receive this. I’ve been using an old blender bottle protein shaker to make my homemade salad dressing in for years. This will present a lot better on the kitchen table when we have guests over!
WhiskWare Egg Mixer
I use the egg mixer DAILY. Not only does it whisk perfectly and holds up to 8 eggs but it also has an egg separator to easily remove yolks. I prefer a 3:1 egg white/yolk ratio for my morning omelettes, which if you’ve separated eggs before you know this can get messy! It has kept my kitchen counter mess free. Sold.
I let my six year old help with dinner and put her in charge or shaking up the eggs. We blasted Taylor Swift and she went to town! I love including my little loves in the kitchen and I love products that make it stress free!! Mom win!!

Sweet Potato Tot Breakfast Casserole
Ingredients
- 1 pkg Alexia sweet potato tots
- 2 Aidells tomato basil and bacon sausages, sliced into coins and then halved
- 4 eggs
- 4 egg whites
- 1 cup shredded parmasean cheese
- 3 cups kale chopped
- 8 oz mushrooms stems removed and quartered
- 1/2 cup grape tomatoes halved
- 1 tbsp olive oil
- salt and pepper to taste
Instructions

Preheat oven to 425 degrees.

In a 12-inch cast iron skillet add tater tots and spread evenly in a single layer.

Cook for 25 minutes, flipping tots halfway through.

Meanwhile in a large pan add olive oil, sausage, kale, and mushrooms.

Salt and pepper to taste.

Sauté until sausage is lightly browned and mushrooms are tender.

Add eggs/whites to WhiskWare egg mixer and shake until well beaten.

Remove tots from oven and reduce oven temperature to 350 degrees.

Layer sausage, kale and mushrooms on top of tots.

Sprinkle parmesan cheese and add tomatoes on top.

Bake at 350 for 15 minutes or until eggs are set. Enjoy!
