Probably one of my most requested and enjoyed Whole 30 meals to date! Lunch is hard and I’m always looking for convenience. These are put together in under 5 minutes with the right preparation!

Taco Boats
Tip: If making tacos for dinner, prepare extra taco meat to store for leftovers during the week. It makes this meal a snap!
Servings 4 servings
Ingredients
- 1 lb lean ground turkey
- 1/2 onion
- 3 tbsp Clean Taco Seasoning
- 1 small can mild diced green chilis
- 1 cup grape tomatoes sliced
- Greek Gourmet pepperoncini
- 4-6 tbsp chunky guacamole
- 4-6 tbsp crumbled bacon optional
- squeeze of lime juice
- 1/2 cup cilantro chopped
- 4-6 romaine leaves
Instructions

In a sauté pan over medium heat brown turkey meat and onion until turkey is no longer pink. Remove from pan, rinse and drain. Add back to pan and heat over medium-low.

Add diced green chiles and seasoning. You may need to add a little water or beef stock to meat mixture for moisture. Continue cooking until fragrant.

Serve atop romaine leaves and top with tomatoes, pepperoncinis, guacamole, bacon, lime juice, and cilantro. Enjoy!
