Turkey ZOODLE soup with Stuffing Dumplings! This is a Whole Family fave that my mother has made every year without fail since I was a child! I just swapped her egg noodles with zoodles. So easy and the perfect use for the last of your Thanksgiving leftovers!

Turkey Zoodle Soup with Stuffing Dumplings
Ingredients
Dumplings:
- 2 cups cooked stuffing
- 2 eggs
- 1/2 c whole wheat flour
Soup:
- Turkey stock
- Diced leftover turkey
- Garlic onion
- Celery
- Carrots
- Zucchini zoodles
- Fresh green beans
- Fresh herbs I used rosemary, sage, and thyme
- Salt & pepper to taste
- Sprinkle of Parmesan cheese
Instructions
Dumplings:

Combine egg and flour and whisk into a thick paste. Add to stuffing slowly and mix well until sticky. Add by heaping spoonfuls to boiling stock.

Cover and cook for 8 minutes or until a toothpick inserted in the center comes out clean. Obviously omit dumpling if doing Whole 30.
Soup:

Combine ingredients, add salt & pepper to taste and a sprinkle of Parmesan cheese on top!
If you want to make this Whole30 Compliant, just remove the dumplings and Parmesan cheese!
