This was the tastiest salad I’ve made at home in awhile! The best part was that it took me all of 5 minutes to throw it together. So many flavors going on salty, sweet, and tart from the citrus vinaigrette. Definitely on repeat for tomorrow!

Winter Beet and Grapefruit Salad
Ingredients
Winter Beet and Grapefruit Salad
- 2 cups chopped salad mix- romaine purple cabbage and baby kale (I like the Dole chopped salad blend minus the dressing and toppings for an easy go to option)
- 2 love beets diced
- 1 grapefruit tough membrane removed and cut into chunks
- 2 tbsp crumbled bacon
- 2 tbsp dried cherries no sugar added
- 10 pistachios chopped
- 1 tbsp reduced fat feta optional ***eliminate if doing Whole 30
- salt & pepper to taste
Kiwi Citrus Vinaigrette:
- 1 tsp olive oil
- 2 kiwis peeled
- 1 lemon juiced
- 2-3 cuties or 1 orange juiced
- 1 small shallot chopped
- 2 tbsp red wine vinegar
- 1 tsp Dijon mustard check ingredients
- 2 tbsp beet juice optional for color
- Salt and pepper to taste
Instructions

Vinaigrette: In a sauté pan heat oil over medium heat and add shallot. Sauté until soft. Add to a blender or magic bullet (which I prefer for small batches of dressing). Add remaining ingredients and pulse until smooth.

Layer salad ingredients and top with Kiwi Citrus Vinaigrette
If you prefer a creamy dressing you could emulsify 1/2 cup olive oil and add to vinaigrette in blender. Pulse until smooth. Enjoy!
