Fall is in the air and I’m craving all things pumpkin and apple spiced! These little nuggets of caramel apple goodness are a hit at our house! If you haven’t already discovered that dates are a girls best friend, let me introduce you to the all natural, fat and guilt free flavor of rich caramel. Medjool dates are my go to for a sweet fix! They can be used to sweeten so many recipes naturally. I like them plain stuffed with almond butter and coconut! Obsessed. Just make sure you pit them before adding them to your mouth or food processor. You won’t make that mistake twice. Happy fall ya’ll!
Caramel Apple Power Bites
I like to double the recipe but make two batches seperately. It doesn't blend as well all at once. You'll want more than one batch guaranteed!
Ingredients
- 1/2 cup pitted medjool dates about 6
- 1 cup dried apple rings not the crunchy freeze dried kind, you want them chewy
- 1/2 tsp apple pie spice
- 1/2 cup sliced almonds
- 1/4 cup rolled oats
- 1/4 cup pumpkin flax granola or granola of choice
- 2 tbsp pure maple syrup
Instructions

Combine first three ingredients in a food processor and process until well blended.

Add remaining ingredients and process until a dough forms.

Roll into balls using a 2 inch cookie scoop. Keep in refrigerator for up to a week. Enjoy!
