Fall Chicken Pecan Salad by Clean Eats & Treats
It’s November! It’s November! My favorite month of flavors! I crave cranberry, pumpkin and baked apple everything! Gimme allll the spices! I love Christmas but Thanksgiving will always be my favorite foodie holiday! This recipe is one I love to make with leftover turkey but you can use chicken just the same. Either way the flavors are delicious. I always make a double batch and it doesn’t ever last longer than a couple days! It’s a whole family favorite I think your family will love too!

Fall Chicken Pecan Salad
Ingredients
- 2 12 oz cans chicken breast chunks
- 1/3 cup Primal Kitchen mayo
- 2 tbsp plain greek yogurt
- 3/4 cup sliced red grapes
- 1/4 cup dried cranberries no sugar added
- 2 stalks celery chopped
- 1 green onion finely sliced
- 1/3 cup walnuts or pecans chopped
- dash of cinnamon
- salt and pepper to taste
Instructions

Drain chicken and break up with a fork in a small bowl.

Add mayo and greek yogurt and mix well.

Add remaining ingredients. Stir.

Salt and pepper to taste.

Serve in lettuce wraps, pita pockets or brioche buns for the whole family. Enjoy!
