Mixed Berry Spinach Salad with Strawberry Pomegranate Vinaigrette
Servings 4 servings
Ingredients
Berry Spinach Salad
- 8 cups baby spinach
- 1 cup strawberries sliced
- 2/3 cup raspberries
- 1/2 cup blackberries
- 1/2 cup blueberries
- 1/2 cup sliced almonds
- 3/4 cup feta cheese
Strawberry Pomegranate Vinaigrette
- 2/3 cup olive oil
- 3/4 cup strawberries
- 1/4 cup pomegranate juice
- 1/4 cup pomegranate vinegar
- 2 tbsp raw honey
- 1 tsp Mrs. Dash garlic seasoning
- salt and pepper to taste
Instructions
For the dressing:

Add all of the ingredients to a blender.

Pulse until combined and the dressing is thick and smooth. If the seeds bother you strain through a sieve before serving. Store leftover dressing in the refrigerator.
For the salad:

Fill a large bowl with spinach.

Top with berries, almonds and feta cheese.

Drizzle with vinaigrette. Serve immediately. Enjoy!
