Meal Prep Omelette Bags

This is another one of my favorite time saving life hacks! I’ve said it before and ill say it again… clean eating is simple and easy with the right preparation! Turn your fridge into a fast food restaurant friends! Meal prep for me is key to my success. If it’s there ill eat it, the good and the bad! Prep the good stuff to keep you from reaching for the bad!

Slice, dice and spiralize your veggies. I use my Paderno Spiralilzer on the thinnest blade for these. You can pick one up here. The potatoes store well and cook up quickly! You could also grate your potatoes if you don’t have a spiralizer but I highly suggest adding one to your kitchen gadget collection!

Once all veggies are prepped, store in plastic or reusable silicone bags. Breakfast is ready in under 10 minutes, all you have to do is grab, sauté and add eggs! You’re welcome!

Omelette Bags

*Refrigerate up to 5 days or freeze if desired.

Servings 6 Bags

Ingredients

  • 1 purple onion diced
  • 1 green bell pepper diced
  • 1 red bell pepper diced
  • 1 orange bell pepper diced
  • 2 medium sweet potatoes. peeled then spiralized love love my Paderno Spiralizer
  • 1 bag of baby spinach
  • Cilantro or fresh basil optional
  • 6 plastic or reusable baggies

Instructions

  1. Combine diced peppers and onion into a bowl. Mix.
  2. Add 1/2 cup of the diced peppers and onion mix to the bottom of bag.
  3. Layer 1/2 cup spiraled sweet potato plus one large handful of spinach in the bag.
  4. Add any herbs you'd like, cilantro and basil are great choices.
  5. Add your choice of oil to a medium pan and heat to medium.
  6. Dump the bag contents into the pan and saute until potatoes are tender.
  7. Add eggs and scramble.
  8. Top with your favorite hot sauce and enjoy!

    I have these in my freezer and they are so awesome! Prep is SO helpful with healthy eating. The lecreust pans would be amazing to cook these omlettes in! Thanks Shannon!
