Wow that is a mouthful! After a few of you mentioned this being your favorite way to eat quinoa I had to try it out! It turned out even better than I had imagined. Holy amazing!! My Whole Family loved it! Definitely going on dinner rotation!

Quinoa Black Bean Chicken Enchilada Casserole
Ingredients
- 1 cup pre cooked quinoa & brown rice I use Seeds of Change
- 1 can black beans rinsed and drained
- 1 cup shredded chicken
- 1 each red and yellow bell peppers diced
- 1 diced onion
- 3 cloves minced garlic
- 1 medium jalapeño chopped and seeds removed
- 1 small can green chiles
- 2 cups red enchilada sauce
- Juice of 1 lime
- 1/2 tsp cumin
- 1 Tbsp chili powder
- Salt & Pepper to taste
- Shredded cheddar cheese optional
Instructions

Seeds of Change quinoa and brown rice mix

Sauté peppers, onion, garlic, jalapeño, and chiles in 1 tbsp olive oil until fragrant

Add chicken, beans, quinoa, rice, red enchilada sauce, lime juice, cumin, chili powder and salt and pepper

Dump it all into a greased baking dish and smother it in cheese if you'd like

Bake at 350 for 30 min

This would be a perfect Meatless Monday meal if you left out the chicken! Enjoy!
